"CERQUETTA" FRASCATI CANNELLINO

At the foot of the Tusculan Hills, rises Casale Cerquetta in the vicinity of Monteporzio Catone, where Vincenzo Ciuffa carries on the winemaking activity started by his family in 1793. Area planted: 350ha.
Grapes varieties:
60% Malvasia del Lazio + 20% yellow and green Trebbiano + 15% Bombino e Bellone + 5% Grechetto
Soil: Volcangenic soils, ancient, sunny vineyards with a reduced productivity.
Production per hectare: kg 6000-7000.
Vinification process: maceration of the skins for 36 hours. First soft pressing with only a 50% must yield. Fermentation at controlled temperature (17°C).
Permanency of the must on the skins for some months.
Tasting notes: this wine shows a pale straw yellow color and nuances of greenish yellow, very transparent. The nose denotes intense, clean, pleasing and refined aromas which start with hints of peach and apple followed by aromas of litchi, banana, acacia, pineapple and pear. The mouth has good correspondence to the nose, a crisp attack and pleasing sweetness, however balanced by alcohol, light body, intense flavors. The finish is persistent with flavors of peach, pear and litchi
Food pairings: ideal with mature or spicy cheeses, excellent the coupling with gorgonzola or Roman pecorino and typical sweets of the Colli Romani.
Very good to enjoy on its own. To be served at 12-14°C
