"CARLEVARI" AMARONE

This is the most appreciated Veronese wine for the way it combines raw power with an almost burgundian softness.

Dark ruby purple when young, it tends to garnet with four to five years of age as its aroma deepens and its youthful largesse becomes austere and ethereal, though still retaining the amaro (bitter) dry finish that gives it its name.

Capable of lasting 20 years, when it shows port-like sumptuousness, it is preferred younger by some, when its fruity buoyancy is unsuppressed.

Amarone della Valpolicella Valpantena is a dry red wine made from selected, partially dried grapes (Corvina Veronese, Rondinella and Molinara) yielding a tiny volume of wine per quintal at high level of natural alcohol (up to 17º) without fortification.

It is enormously rich and concentrated, with a bitterness so marked as sometimes to make them seem almost corked.

This is, together with Recioto, the meditation wine of nort-east Italy, to be taken in small doses only at the end of the meal.

Cadoro Amarone is a deep ruby-red wine in colour with garnet highlights.

Its full, intense fragance has elegant notes of walnuts and spices and is reminiscent of cherry preserves.

On the palate it is dry, well-balanced, full-bodied, well structured and velvety.
