“CANEPA” CARMENERE

Canepa vineyards are located in the Maipo and Colchagua Valleys. These two regions are widely renown as among the world’s most exciting winegrowing areas and responsible for Chile’s excellent reputation as a wine producing country. In total, the Canepa winery, established in the mid 30’s by Jose Canepa Vaccarezza, owns 1,000 hectares of land that are constantly being developed. Until now, more that 400 hectares of vineyards are in full production.

Vinification: this is the last variety to ripen in the season. De-stemmed and crushed grapes were sent to the stainless steel fermenter. Selected yeasts were added. Pumping overs three times per day were enough to get a good structure. Temperature during fermentation: 26-28°C. Once the alcoholic fermentation was finished, the skins were maintained in contact with the wine during six extra days.

Tasting notes: Bright and deep red ruby colour with violet edges. Ripe and pure. Blackberry and cassis aromas with Intriguing cedar, mineral and truffle notes. Fruit wins out easily. On the mouth is velvety and soft. Ripe and balanced through the medium-body finish.

Ageing potential: Drink now. Will improve with cellaring and additional time in bottle for 3-5 years.

Food pairing: Pasta dishes with olive oil, sun dried tomatoes and olives. Milanese Risotto with Porcini mushrooms.
