                 “MATOUBA” FRENCH GOLD RUM 
                   
                  Rum has long been the tipple of the salty mariners of  yesterday but there is a new appreciation of it by spirit drinkers world-wide.  The growth in interest has come with appreciation of the merits of golden rum.  Like single malt whiskies they entail a process of intricate distillation,  ageing in oak barrels for considerable time and consumate blending skills. 
                  Rum is made from molasses, a by-product of the production of  the crystalline sugar. While many rums are made from a single distillation,  premium, golden rum, comes from the blending of two separated distillates. 
                  In the first, selected batches of molasses are distilled by  a continuos process in a column still. For many producers this is the end of  the process. The white rum is either bottled or is mixed with caramel to  produce the dark or navy rum. 
                  But producers of golden rum take other selected batches of  molasses to put through a double distillation in a copper pot still, a process  that produces more aromatic and intensely flavoured distillates. 
                  At this point, the separate distillates are aged in oak  barrels and the master blender select from different barrels to produce the  style he wants: the single distillates will provide vanilla dominated  characters while the double distillate batches will provide a stronger more  robust palate. Both will have taken on a light golden glow from their time in  the Kentucky  oak barrels. 
                  Golden rums made in this fashion display the complexity that  we associate with other premium spirits. These characters are capturing the  attention of discerning drinkers worl-wide.
