“ARCANIA” PINOT BIANCO

Pinot Bianco is a time-honoured member of the Pinot family. Proof of its use has been found as far back as Roman times. Derived through bud mutation from Pinot Noir, this variety, growing in vineyards located at virtually prohibitive altitudes in the Alto Adige and Veneto, often expresses its qualities in a unique manner because of variations in day and night temperatures in the period preceding the harvest. The grapes are immediately soft-pressed on arrival at the winery and the must is cooled to 10ºC, and left to rest for 24 hours. It is then fermented with the addition of selected yeasts and brought to a controlled temperature of 18º-20ºC for 15-20 days. The wine is then fined in stainless steel tanks and bottled in early February.
Castello di Arcano Pinot Bianco is yellow in color with greenish reflections. This wine features an intense and fragrant bouquet with notes of white flowers and fruity scents of pears and peaches. It has a dry, velvety flavor and a good texture. Its natural acidity fully supports the aromatic structure.
Food pairings: fish, crustaceans and shellfish, white meals and cured meats with delicate flavours. Castello di Arcania is the result of bringing together five original wine-growers of Friuli well-experienced in producing high-quality organic wines according EEC Reg 2092/91 and certified by IMC (Istituto Mediaterraneo di Certificazione)
